This Buckwheat Banana Bread is the ultimate guilt-free indulgence, made with healthy and delicious ingredients that'll make your taste buds sing. We've ditched the sugar overload and opted for a touch of maple syrup to add that perfect amount of sweetness. And with the addition of buckwheat, you'll get a dose of fiber and nutrients that'll keep you feeling full and satisfied.
Ingredients
1.5 cups buckwheat flour (Original Lil Bucks)
½ tsp baking soda
1 tsp baking powder
1 tsp cinnamon
¼ tsp salt
2 eggs
⅓ cup melted coconut oil + extra for greasing
3 ripe bananas
⅓ cup almond milk
¼ cup maple syrup or honey
1 tsp vanilla extract
DRY INGREDIENTS
WET INGREDIENTS
Directions
Preheat oven to 350 degrees F
Grease loaf tin with coconut oil
Blend Original Lil Bucks in blender until flour texture
Mix together dry ingredients
In separate bowl, mash bananas
Whisk in eggs to the bananas
Add in remaining wet ingredients and mix well
Slowly fold dry ingredients in to wet ingredients
If you want to add in extras (chopped nuts, chocolate chips, etc.) fold in now
Pour in the greased tin and spread evenly
Sprinkle over Lil Bucks and bake for 40 minutes or until a skewer inserted comes out clean
Allow to cool, remove from tin and slice to serve
Recipe Note
Add in some chopped nuts or chocolate chips to sprice it up a bit!
