Nothing screams YUM like Danielle's Lil Bucks Falafel recipe! Here she takes a simple dish and adds a bit of buckwheat pizazz. Trust me your tummy will thank you later!
Ingredients
Falafel
- 1 can (~1 3/4 cups) of Garbanzo Beans
- 1 Tbsp cumin
- 1/4 tsp cayenne pepper
- 1/2 a bunch of cilantro
- 1/2 a bunch of parsley
- 2 cloves of garlic
- 1 tsp salt (more to taste)
- Pinch of pepper
- Juice from one lemon
- 2 Tbsp tahini
- 1 1/2 cup Original Lil Bucks
- 1/4 cup garbanzo bean flour
Some Fun Falafel Fixings
- Tabouli
- Pickled onion
- Tahini sauce or hummus
- Pita
Directions
1. Rinse and drain your garbanzo beans. Dry out the garbanzo beans as much as you can.
2. You can do this by placing them in paper towel between two plates.
3. While the beans are drying out, prepare the rest of your falafel ingredients. Start by slicing the yellow onion and then set aside.
4. Place the bunches of cilantro and parsley in a food processor and puts until chopped.
5. In the food processor, dd in garbanzo beans, spices, onion, lemon juice and tahini. Blend until well incorporated.
6. Next, gradually add in the garbanzo bean flour so the mixture sticks together into a runny “dough”.
7. Using your hands, form falafel into small-medium sized balls.
8. Pour Lil Bucks onto a plate or into a bowl so you can roll each falafel ball in them.
9. Air fry on 350° for 15 minutes, flipping halfway through and ensuring the Lil Bucks don’t burn. The falafels are done when the Lil Bucks start to look toasty!
10. Remove from fryer and serve warm with you favorite fixings in a bowl or with pita!
11. Store in airtight container in fridge.
